Enjoy Gluten-Free Granola Bars for Breakfast or a Snack



Yummy Granola Bars

Granola is a delicious option that most people seem to enjoy. It’s available (in bulk) at many food coops, and of course, it’s packaged by many cereal making companies. The problem with some pre-made granola is that they often contain too much sugar, and their oil content can go rancid pretty quickly.


Here’s a granola BAR recipe that will give you some control over the ingredients that you and your family eat.


Dry Ingredients: 2 c. gluten free rolled oats + 1/2 c. organic rice crispies, ¼ c. fresh raw organic sunflower seeds, +3/4 c. quinoa flour (coarsely grind quinoa flakes in a coffee bean grinder), + 1 t. cinnamon powder, +1/8 t. nutmeg powder +1/2 t. baking soda, +1/2 t. salt.


Wet ingredients: 1/4 c. melted coconut oil + 1 T. sunflower seed nut butter, + 1 T. melted organic butter, + 1/2 c. maple syrup or honey, +1/4 c. raw coconut sugar + 1/4 c. mashed banana (or try soaked, pureed dates), +1 t.. pure vanilla extract.


How to Make the Bars

Line an 8-inch pan with parchment paper. Set aside. If you want to bake the bars, preheat your oven to 350 F. Stir together all dry ingredients in a large bowl. Stir liquid ingredients together in a separate bowl, then stir wet into the dry. Transfer to the prepared pan. Oil your hands, or use a second sheet of parchment paper or wax paper.) Press down very firmly on the mixture. Bake on the center rack for about 16-18 minutes. Let cool completely before cutting into bars. For no-bake bars, simply chill the mixture until firm.
